Springtime in the Woods April 30, 2013

A visit with next-door neighbor Jo is always a pleasure. She is about as down-to-earth as they come. Her back yard is modestly free-style; let the woods do what they will, with little restraint. Having two rambunctious dogs running about trampling the May Apples is not going to throw anything off.
She discovered a small patch of Bloodroot by a nearby fallen tree.

I soon noticed my Bleeding Hearts were also up. It smells so good outside. The Dames Rockets which have also emerged, will soon invade the senses with their heady fragrance. I think the Locust trees with their wicked tire-killing thorns and eye-popping floral display, will also bloom this year, talk about sensory overload~ LOL!

…sometimes you just gotta lay in the dirt and be down to earth…

Springing into action, getting out of the house April 30, 2013

The weekend was about as perfect as could be. Baby Girl and her MIL arrived from KY on Friday night.

Chrystal stayed over and then took off Saturday morning to attend a family baby shower in Racine. Nats and I enjoyed some time in the morning before she took off for a visit with her old bakery buds at Franks Grocery in town. She got to visit with her bud Lizz too.
When she got back, we had lunch out on the deck, the sun felt so good!

Later that day her Sis from a different Mother Brittany, came and spent the evening with us. Soon they had a campfire going as a result of burning some old memorabilia of Nat’s from a past relationship. Silly girls!

Sunday came too fast, and it was time to take Baby Girl back to Racine to meet up with her MIL for the long ride back home to KY.

Sunday I got both Stella and LunaC out, dusted off and gassed up. Some friends came up from Chicago to visit with Mike, made his day.

It was a good weekend.

Easy peasy recipe:

1 box angel food cake
2 cans of 21 oz lemon pie filling or 2 can crushed pineapple

Mix together and bake in a greased 9 x 13 cake pan at 350 degrees for 25 minutes. Cool and cut into squares.

I found this picture of Igor at 2 months, with Mike, on the nightstand at SIL’s house, sleep-over; it made me smile despite this killer headache…

I am one day from finishing a very special project I’ve been working on, going on ** months now~ the tulips happened to be a gift card I got in the mail last week, and the colors matched perfectly! Irony 🙂

NEW YORK (AP) — Annette Funicello, who became a child star as a perky, cute-as-a-button Mouseketeer on “The Mickey Mouse Club” in the 1950s, then teamed up with Frankie Avalon on a string of ’60s fun-in-the-sun movies with names like “Beach Blanket Bingo” and “Bikini Beach,” died Monday. She was 70.

She died at Mercy Southwest Hospital in Bakersfield, Calif., of complications from multiple sclerosis, the Walt Disney Co. said.
Her legacy lives on in her many appearances on the Mickey Mouse Club TV program. The pretty, dark-haired Funicello was just 13 when she gained fame on Walt Disney’s television kiddie “club,” an amalgam of stories, songs and dance routines that ran from 1955 to 1959.
She left us with some great memories. Really~:)

Baked Ziti
A favorite in our home, this is one of the easiest recipes to make.

1 lb Penne pasta, cooked per directions
1 lb ground round
pinch of oregano, basil
2 cloves minced garlic
1 can of your favorite pasta sauces
1 pkg Sargento Mozzarella cheese
1 pint cottage cheese (optional)

In a large skillet, preheat 2 T. canola oil. Add basil, oregano and garlic, sauté lightly. Do not burn! Add ground beef to pan, stir until browned. Add spaghetti sauce, reduce heat, cover and simmer.

Cook pasta according to package directions.

Place on ladle-full of sauce in the bottom of an 8×11 casserole, then add half of the cooked pasta. Layer sauce then cottage cheese on next, if desired. Add another layer of pasta, more sauce, then top with sliced mozzarella cheese. Cover with aluminum foil and bake at 400°, 25 minutes or until bubbly. Remove foil in last 6 minutes to brown cheese. Let set 5 minutes before serving.

Darby is tired of modeling

……She’s so cute and warm and sleepy from all the modeling……

For those of you new to my blog (thats everyone but me) Darby is my adorable 3lb 1oz chihuahua who spends most of her time asleep on my lap and is the owner of an ever increasing sweater collection. Now that it is starting to rain and get colder in the Pacific Northwest she is more that happy to wear a sweater or two.

As promised to my blog reader, I’ve rewritten Darby’s sweater pattern and (hopefully) corrected any errors. This time, it has a cable on the back, ribbing at the top and bottom (to prevent rolling and give it a nice stretch) and shaping along the center, between the legs so it is fitted all the way along the body. RECIPE BOX : Pineapple Delight Dessert April 1, 2013

Pineapple Delight Dessert

2 cups graham cracker crumbs
1/2 cup butter or margarine, melted
1/2 cup butter or margarine, softened
1 and 1/2 cups icing sugar
1 egg
1 tsp. vanilla
1 14oz. can crushed pineapple
2 cups whipped cream (prepared from a small carton of whipping cream, Cool Whip, or Dream Whip)

Preheat the oven to 325 degrees F and place rack in the centre of the oven.
In a medium bowl, combine the graham cracker crumbs and 1/2 cup melted butter/margarine. Press the mixture into an 8×8″ or 9×9″ baking pan. Bake for 10 minutes, then cool completely on a wire rack.
In a separate bowl, mix together the 1/2 cup softened butter/margarine, icing sugar, egg, and vanilla with an electric mixer until smooth. Spread this mixture over the crust once it has completely cooled. Bake for 15 minutes, then remove and cool completely on a wire rack.
Prepare your whipped cream of choice. If using a carton of whipping cream, beat the cream in a medium bowl until it is thick and stiff. You may want to add 2 Tbsp. of white sugar and 1 tsp. vanilla extract for sweetness and flavour. Drain the juice from the canned crushed pineapple. Mix the whipped cream and pineapple together and spread evenly over top of the cooled butter filling.

Garnish the dessert with a sprinkle of graham cracker crumbs. Keep chilled and serve cold.
