Been pretty occupied with ailing hubs, knitting is getting neglected. I finished one slipper for Nats, and the second one is about 2 hours from completion. I want to get them done by Valentines Day…

Try this great and healthy snack idea, you won’t be able to stop eating it!

Jacques Pepin’s Baked Kale Chips
1 bag fresh kale
Olive oil
Salt to taste

Dump bag of kale in a large bowl. Drizzle a little olive oil over all, add a dash of salt to taste. Hand mix and place on cooling rack on cookie sheet in middle position oven. Bake at 250• for 25 minutes. Be careful not to burn. Remove from pan and eat immediately. Leftovers placed in a zip bag will go limp. Freeze and save for soups!

The kids are home from Texas, a lonnnnng ride back!!!!! They stopped in KY yesterday to drop off the contents of Nat’s car, then hit the road again.

Beastly Orange Scones Recipe ~ Wisconsin Treats and Good Reads January 7, 2013

Glazed Orange Scones

3/4 sifted all-purpose flour

1/4 cup sugar

1/2 teaspoon salt

2 1/4 teaspoons baking powder

1/4 cup (half a stick) butter

the zest (grated peel) of two oranges

Use a pastry blender or knife to cut through these ingredients until particles are about the size of a pea. Beat two eggs separately and save out about 2 tablespoons of the eggs. Beat 1/3 cup cream into the larger portion of eggs, then pour the mixture into the dry ingredients and stir only until blended. Add a quarter cup of dried cranberries if you like. Spread the dough evenly into an round baking pan or fill separate compartments of a muffin tin about half-full. bake in an oven preheated to 450° for about 15 min. If you use the baking pan, which is how I do it, cut the finished product into eight triangles. Drizzle with glaze if you like.

Glaze

2 to 3 tablespoons of very soft butter

1 cup of powdered sugar

1/2 teaspoon vanilla

small pinch of salt

about a quarter cup of milk more or less

This glaze is my own recipe so it is rather haphazard. Mix first four ingredients. Add milk a little at a time until the mixture is just pourable enough to drizzle over the warm scones. If you would rather spread it on with a knife, be sure to stop adding milk when mixture reaches a paste like consistency.

UHaul what 1,500 Miles and then bake Carrot Cake Cookies??? January 6, 2013

My dughter’s MIL is frikken amazing! She just drove a UHaul from TX to KY, 1,500 miles, over the Cumberland Gap, landed in her bed at 11:30pm last night. And is now baking Carrot Cake Cookies. I so got the recipe!!!!

CARROT CAKE COOKIES

Carrot cake box mix*
1/2 cup oil
2 eggs
Bake 350 for @10 min.
Eat while warm.
Yum
*Any cake mix can be used. Just made chocolate with Caramel pieces. Try the butterscotch chips with chocolate-BAM!

My mom used to make these all the time, then she passed the spatula down to me when I was about 13. 😉
I am loading up on eggs and boxed cake mixes tomorrow, right after the house nurse leaves! Thank you, Chrystal, you ROCK, Sister!!!!
